Many of you know I pretty much use up any time I have away from fishing either talking about or writing about fishing. Yes, it’s tough talking fishing 365 days a year, but I’m grateful it’s me that gets to do it. One of the more popular topics that arises out on my boats is smoking salmon.
The “how to” of Smoked Salmon is a regular discussion item for obvious reasons and I often times throw out some basic recipes to get people going. The idea of doing Smoke without any sugar, on the other hand, is a completely different subject and one that quite frankly has taken me a long time to want to broach.
Smoked Salmon is traditionally somewhat very sweet, and my family and I tend to eat it a lot, so coming up with a recipe that went without the sugar would be great. Fortunately for us and you, this recipe ended up turning out fantastic and it may even be my favorite.
It’s amazingly simple and I’d love to hear what you all think.

Off to snooze. I’m fishing for steelhead on the Clackamas in the morning.
